This quick bread is loaded with pumpkin and sweetened with banana.
Everyone loves a quick bread, and this one goes together in 10 minutes flat. Preheat the oven while you're making the batter - you'll have your own loaf of delicious pumpkin bread cooling on the kitchen counter in less than an hour.
If you want to drizzle the top with a quick icing, I won't tell anyone.
I love banana bread, and I also love all things pumpkin (and pumpkin spice!), so this recipe was an easy fix for both cravings. The bread is dense and moist, almost custard-y, thanks to all the pumpkin and the eggs. It has very little sugar and butter, but the banana fills in for both and I promise you won't even notice that this bread doesn't have the usual 1+ cups of sugar contained in traditional quick bread recipes. It's good for you, and yummy. Now, get to baking!
Pumpkin Spice Banana Bread
5 tbsp butter, melted
1 ripe banana, mashed
2 large eggs
1 cup pumpkin purée
1/4 cup granulated sugar
2 tbsp brown sugar
1 cup flour
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/8 tsp allspice, ginger, nutmeg
Preheat oven to 350. Butter a small loaf pan (4.5x8.5) and line with parchment paper. In small bowl, whisk together the flour, salt, baking powder, baking soda, and spices. In a large bowl, mix melted butter, banana, eggs, pumpkin, and sugars. Add the flour mixture to the pumpkin mixture, combining well. Pour batter into prepared loaf pan and bake ~40 minutes. Cool in pan on rack for 10 minutes, remove from pan and cool completely.
